This is a wine from one of Chablis’ nine Grand Cru vineyard sites. The site in Les Preuses is owned by Albert Bichot which means they control the production of this wine from the carefully-tended grapes on the vine, to hand-harvesting, to fermentation in used oak barrels with further maturation in oak barrels for 10 months, and in steel containers for 6 months on fine lees.
The resulting wine shows pure citrus and apple characteristics, as well as faint toasty notes, and kind of saline tension on the palate, great texture and tremendous length. It will develop beeswax and honey characteristics in bottle and will reward drinking at any stage in the first decade or so after the vintage.
