Gergenti Grillo is produced using a rigorously sourced selection of organically grown grapes.
The grapes are handpicking in the second week of August and then gently pressed. A slow fermentation takes place at a controlled temperature of 15° C for about 15/20 days.
After a short period in tank the wine is aged in bottle for 3 months.
This wine is light straw yellow in colour, fruity with a finish of Sicilian citrus. On the palate it is clean, soft with a good level of acidity.
