Monbazillac is produced in the South West of France, with its vineyards surrounding the Dordogne river.
The vineyards of this Bergerac sub-district, enjoy a particular type of temperate climate – in the autumn, the morning mist is followed by afternoon heat from the sun and the subsequent humidity enables the growth of ‘Noble Rot’ (Botrytis Cinerea).
This ‘Noble Rot’ dehydrates the intact berry, thereby increasing the natural concentration of sugar, which is key to producing high quality sweet wine.
