We are delighted to have found René Jolly’s champagnes. They are a very traditional producer who grow their own grapes on eleven hectares in the Côte des Bar. All harvesting is done by hand and yields are strictly controlled. The vineyards are organically farmed and annual production is limited to less than 6000 cases of wine a year across the range. The wines are disgorged by hand with no ice (à la volée). The Blanc de Noirs is 100% Pinot Noir. It spends three years on the lees and strikes a perfect balance between fruit characteristics and the baked brioche characteristics in a way that is typical of champagne.
