The first two pressings of the winery’s grapes are blended to create the celebrated Rathfinny Sussex Sparkling wine. They then make a unique still wine from the third pressing of these grapes, the Rebêche, and this forms the basis of the spirit range. This neutral grape spirit, with fruit notes and a full, rounded mouth-feel, is then blended with grain neutral spirit, made from wheat, at a ratio of 30:70. It is then macerated with carefully selected and hand-weighed botanicals for a defined length of time and then distilled in an 1,800 litre copper still which further enhances the flavours.
