Manzanilla La Gitana follows the traditional methods set by the governing body of the Denomination of Origin ‘Manzanilla-Sanlúcar de Barrameda.’
Vines grow in Albariza soil in the ‘Balbaina’ and ‘Miraflores’ areas of the Jerez Superior District (approximately 200 Ha).
Bodegas Hidalgo produce it solely from free-run juice, fermenting it naturally with the yeast present on the grapes in water-cooled stainless steel tanks.
After fortifying it to 15% ABV with grape alcohol, they age it in American oak casks using the ‘solera’ or fractional blending system, in the coastal town of Sanlúcar de Barrameda.
Throughout maturation, a veil of yeast or ‘flor’ develops, ensuring a light, dry taste.
Only in Sanlúcar de Barrameda can flor thrive year-round, giving Manzanilla its distinctive character.
