Eau de Vie stands for “water of life” and the distilled spirit of the same name is a colourless, brandy made from any variety of fruit other than grapes. Technically speaking, any distilled spirit is an Eau de Vie but in practice this is usually restricted to clear, fruit brandies or “white alcohols”. All brandies start as Eau de Vie before being aged in oak.
