Strictly speaking, Tequila is a Mezcal, but whereas Mezcal can be made from a variety of different agave species grown in eight regions, Tequila is distilled specifically from the Blue Agave plant, grown mainly in the Mexican state of Jalisco. It takes in the region of 8-12 years for a Blue Agave plant to mature. Mexicans drink Tequila neat, without the accompanying salt and lime favoured by others around the world. It is most popular when combined with lime and triple sec in the classic Margarita cocktail.
