Cellers Unio are a co-operative winery that represent hundreds of Catalan grape-growers. This wine is made with a selection of fruit hand-harvested from the steep volcanic slate (locally called llicorella as it can be said to resemble liqourice) slopes of Priorat. It is made with the region’s classic grape varieties Carignan, Grenache, with an added dash of Merlot.
The wine is fermented in temperature-controlled vessels in order to preserve the purity of the fruit flavours. Then the wine is racked into French oak barrels and left to mature for 12 months before bottling. This is a typical wine form the region: full-bodied, with ripe blueberry and plum fruit characteristics, and clove, liquorice, and toast characteristics from oak.
