Caol Ila is the biggest distillery on Islay. It was demolished in 1972 and then rebuilt. The distillery’s 12 year old is relatively light coloured and shows characteristics of pepper, and peat smoke, as well as toffee and vanilla from oak ageing – there is a floral characteristic as well. The malt is medium-bodied with a good intensity of flavour. Consistently good.

Appearance: Pale straw.
Nose: Subdued, citric fruitiness; a whiff of bath oil and dentist’s mouthwash. A fresh and appetising nose, with little or no trace of smoke.
Body: Smooth, pleasant mouth-feel: firm with a light to medium body.
Palate: Drinks well at natural strength; sweet start; pleasant, light fragrant smokiness and a lengthy finish.
Finish: Sweet smokiness in the lingering, slightly sour finish.
