Known locally as ‘the place of the lush grass’ Sheestown is a rolling, lowland terroir of well-drained loamy soil where Phillip O’Brien has farmed the land for half a century.
For maturation, 35% of the casks were first-fill American oak, 21% virgin American oak, 25% premium French oak and 19% were previously used to age vin doux naturel (fortified wines).
Tasting notes:
Appearance: An amber hue appearance with lingering oils
Nose: Earthy notes on the nose with clove, poached pears and honeycomb
Taste: Gentle spice mix greets the palate with lasting cloves that dries with citrus peel marmalade and fresh honey
Finish: A long spicy finish that leaves a warm tingle on the front of the tongue
