Bodegas César Florido Moscatel Pasas delivers a superb expression of sweet Andalusian wine from the coastal town of Chipiona. The Florido family has produced wine here since 1887, maintaining one of the oldest independent bodegas in the region. Today, the fifth generation continues to craft wines that celebrate tradition, patience, and the essence of the Sherry Coast.
Winemakers harvest Muscat of Alexandria grapes from vineyards cooled by Atlantic breezes. The unique maritime climate enriches the fruit with bright aromatics and natural sweetness. After picking, workers spread the grapes on esparto mats to dry under the strong Andalusian sun. This traditional asoleo process concentrates the juice and deepens the grape’s flavour profile.
They press the semi-dried grapes gently to extract thick, aromatic must. Fermentation occurs slowly in stainless steel tanks to preserve freshness and varietal character. The wine then ages in seasoned American oak casks under the criaderas y solera system. This ageing method layers complexity, depth, and harmony into every drop.
The finished Moscatel Pasas gleams in the glass with rich amber tones and golden highlights. Aromas of orange blossom, honey, and dried apricot rise immediately. As the wine opens, scents of toffee, sultana, and candied peel develop. On the palate, it flows smoothly with luscious sweetness balanced by lively acidity. Flavours of caramelised fruit, roasted almond, and warm spice linger with remarkable length.
Enjoy this wine with blue cheese, nut-based desserts, or classic almond pastries. Serve it slightly chilled to highlight its freshness and perfume. It also pairs beautifully with foie gras or rich pâté, creating a luxurious contrast of texture and flavour.
