Cotswolds Founder’s Choice Single Malt Whisky is part of the distillery’s Cotswolds ‘Cask Expressions Collection’. The cask strength Founder’s Choice Single Malt Whisky is aged exclusively in STR (Shaved, Toasted and Re-charred) ex-red wine casks.
Renowned whisky consultant, the late Dr. Jim Swan created these highly active casks. They give a rich and intense maturation to this fruity new make spirit, offering strong notes of toffee, chocolate and red fruits. They also impart a beautiful, deep colour.
Aromas of dry hay, freshly-cut wood, dark chocolate, dried figs and plums in syrup fill the nose, complemented by notes of warm porridge, toast, butterscotch, dried fruit and fresh berries throughout the palate, with hints of roasted hazelnuts lingering in the finish. It also boasts a smooth and velvety mouthfeel, showcasing the distillery’s commitment to precision and attention to detail.
The malt for the whisky was 100% locally grown, traditionally floor malted barley from the Cotswolds. Meanwhile, the yeast combined two complimentary varieties. Bottled at cask strength, it retains every drop of flavour from its complex processes. This is a truly handmade, grain-to-glass whisky.
