The Cuthbert family distils Daftmill on their working farm in Fife. They grow their own barley and distil only during farming’s quieter seasons. This deliberate approach gives every bottle a sense of authenticity and place.

Cask #97 matured entirely in a first-fill Oloroso sherry butt, imparting generous layers of fruit and spice. Bottled in 2025 exclusively for the UK, this release offers just 642 bottles at a commanding 59.8 % ABV.

Tasting Notes

The nose greets you with dried figs, sultanas and warm Christmas cake. Polished oak mingles with roasted nuts and orange zest. A subtle note of leather and dark chocolate deepens the profile.

On the palate, bold sherried fruit dominates. Black cherries meet rich toffee, while cinnamon, clove and nutmeg bring warming spice. Gentle oak tannins support the robust body without overshadowing the fruit.

Hints of treacle and espresso appear as the whisky develops in the glass. The texture feels silky and mouth-coating, carrying intense flavour with refined balance.

The finish lingers luxuriously. Dark cocoa and toasted oak mingle with sherried fruit before fading into a warming, spiced glow. A final whisper of herbal complexity invites another sip.
