Del Maguey Pechuga Single Village Mezcal showcases Oaxaca’s most revered artisanal distilling tradition. Producers in the remote village of Santa Catarina Minas craft this mezcal entirely by hand, honouring generations of knowledge and devotion. Producers harvest mature espadín agave by hand and roast it slowly in an earthen pit lined with volcanic stones. The slow roasting infuses the agave with gentle smoke and rich, earthy sweetness. They crush the roasted hearts using a traditional stone tahona, then ferment the mash naturally in open wooden vats. Wild yeasts drive the fermentation, creating complex, layered flavours.
Distillers use small clay stills to double-distil the liquid, which adds distinctive minerality and texture. For the third distillation, they hang a raw, skinless chicken breast (pechuga) inside the still. They also add a selection of fruits and spices—such as apples, plantains, almonds, and rice—to the vapour path. The meat’s proteins clarify the spirit, while the fruits and spices lend exquisite aroma and balance. This sacred process takes place only for celebrations, weddings, or seasonal festivals.
The finished mezcal bursts with character and refinement. Aromas of roasted agave, clove, and stewed fruit rise gently from the glass. The palate delivers ripe pear, cinnamon, and toasted almond alongside a delicate, savoury smokiness. Each sip lingers with mineral depth and extraordinary balance.
