Upon closer inspection, it becomes clear that no two fields of crops are the same.
To truly understand Fielden, it’s essential to know what they are doing in the fields, and why – as well as how – their methods differ entirely from conventional ones.
They advocate for regenerative farming and are dedicated to revitalising England’s fields, carefully growing heritage grains.
For them, this means no agrichemicals: no herbicides, pesticides, or fungicides.
Chemicals are unnecessary because nature is already taking care of the work. It is a more sustainable approach to farming, benefiting the soil, the grain, and the wildlife. The result is a whisky rich in flavour.
Fielden Harvest 2019 Rye Whisky celebrates the grains gathered that year. Unlike most whiskies, where the vintage only tells you when it went into the cask (with grain from any year), Fielden’s vintage means the whisky is made entirely from the same year’s grain harvest.
The mild weather and summer rain in 2019 produced a rye that was brighter and more delicate than in previous years. This gives the whisky the taste of early summer – fresh, floral, and full of flavour.
Harvest 2019 Rye Whisky is crafted from a blend of 73% rye, wheat, and barley, with a small portion of the grains malted.
The mash ferments for four to five days in stainless steel tanks before undergoing double distillation in both pot and column stills.
The whisky is then aged in a combination of eight casks. These are primarily American oak (including STR and second-fill), as well as a Sauternes barrique and a Ramandolo barrel.
Once the ageing process is complete, the spirit is slowly married and carefully reduced to 50% ABV.
Producer’s Tasting Notes
Nose: Roses and herbs with fresh ginger, apricot and a little butter.
Palate: Refreshing herbs and delicate summer fruits, soft pastries: brioche bun, cream and warming apple crumble.
Finish: A pinch of white pepper and fresh thyme.
