Waterford ‘Ballykilcavan’ Edition 1.2 Irish Single Malt Whisky is a peppery, fruity Irish whisky from a premium organic producer.
Using only 100% Irish malted barley, Waterford’s Single Farm Origin series is a range of Limited Edition whiskies that explore Irish ‘Terroir’.
These whiskies are non-chill filtered. They have no additives or colouring.
The second release from Ballykilcavan was distilled from barely grown by David Walsh-Kemmis in the Irish barley heartlands to the west of The Barrow in Co. Laois. His fertile fields enjoy the shelter of ancient woodland on some of the best soil in the region to grow malting barley.
For maturation 55% of the casks were first-fill American oak, whilst 22% were premium French oak. The remaining 22.5% previously held vin doux naturel (fortified wines).
The second edition is almost four months older than the first with some of the first-edition spirit included.

Tasting Notes
Appearance: A yellow gold appearance with heavy oils.
Nose: Red grapes on the nose with tilled earth and then dried fruit.
Taste: An initial oily mouthfeel with white pepper, apricots, spices and toffee.
Finish: A dry oily finish with spice, chocolate, then malt that lasts.
