Waterford ‘Ballykilcavan’ Edition 1.2 Irish Single Malt Whisky

Using only 100% Irish malted barley, Waterford’s Single Farm Origin series is a range of Limited Edition whiskies that explore Irish ‘Terroir’.

These whiskies are non-chill filtered with no additives or colouring.

The second release from Ballykilcavan was distilled from barely grown by David Walsh-Kemmis in the Irish barley heartlands to the west of The Barrow in Co. Laois. His fertile fields are sheltered by ancient woodland on some of the best soil in the region to grow malting barley.

For maturation 55% of the casks were first-fill American oak, 22% were premium French oak and 22.5% were previously used to age vin doux naturel (fortified wines).

The second edition is almost four months older than the first with some of the first-edition spirit included.

Tasting notes:

Appearance: A yellow gold appearance with heavy oils

Nose: Red grapes on the nose with tilled earth and dried fruit

Taste: An initial oily mouthfeel with white pepper, apricots, spices and toffee

Finish: A dry oily finish with spice, chocolate, malt that lasts
