Waterford Organic Gaia 1.1 Irish Single Malt Whisky is the first release in the Arcadian series, using 100% Irish, organic malted barley.
Waterford’s Arcadian series is a provenance-driven range of whiskies made from organic, biodynamic and heritage grains.
Mark Reynier, the man behind the renaissance of Islay’s Bruichladdie, founded the Waterford Irish Single Malt Whisky brand. This is a pioneering whiskey project using only Irish barley, including organic and biodynamic, from unique terroirs. Whisky-makers harvest and distil each crop separately. It is the first organic Irish whisky as certified by the Organic Trust, having met rigorous production regimens and audits.
Organic Gaia 1.1 was distilled in 2016 and then aged for 3 years and 9 months in first-fill American, premium French, virgin American and vin doux naturel casks, creating a fruity, spicy character.
It also comes in the most stunning bottle with a glass cork and in a holographic gift box. It certainly will make a fine addition to your collection.

Head Distiller’s Observations
Nose: Orange zest, malty figs and salted caramel aromas.
Taste: zesty pepper on the tongue with cloves, cherries, butterscotch and layers of spice.
Finish: Long, oily and dry, then with a final hint of sweetness.
