Waterford ‘Sheestown’ Edition 1.2 Irish Single Malt Whisky is part of the Waterford Single Farm Origin series and uses barley exclusively grown in Sheestown, Kilkenny.
Known locally as ‘the place of the lush grass’ Sheestown is a rolling, lowland terroir of well-drained loamy soil where Phillip O’Brien has farmed the land for half a century.
It then matured in a variety of casks including first-fill American oak, French oak, and Vin Doux Naturel, creating a unique flavour profile. This also gives it a lush and creamy texture.
Waterford’s origin-focused approach to whisky production has proved without a doubt that the farm is as important for whisky as the vineyard is for wine.

Head Distiller’s Observations
Appearance:Â Golden with oils that grip the glass like its life depended on it.
Nose:Â Malty, honey, fruit cake, pears, sherry trifle, cookie dough, a summer hay note, orange peel and an earthy note.
Taste: Spices and clove that gently warms then dries. Next, blood oranges, honeycomb, barley sugar and ginger.
Finish:Â Long with a gentle spice and citrus that tingles.
