Ivo Varbanov ‘Crystal Silence’ Viognier is a fresh, fruity viognier from the South Sakar region of Bulgaria.
Bulgaria is a lesser-known wine country but one with a history dating back to 4000 BC. Its sunny, hilly climate lends itself particularly well to wines in a fruit-forward style.
This winery, run by its founder Ivo Varbanov, focuses on organic and biodynamic farming. Ivo is both a concert pianist and a vigneron, dedicated to sharing Bulgarian culture with the world. He aims to produce wines with a high-quality focus on terroir, and remains involved in all aspects of winemaking.
AÂ 100% Viognier, this wine is fermented and aged in stainless steel vats in addition to a 600-litre Bulgarian oak barrel. There is minimal fining and filtration to preserve the natural texture of the wine.
Ivo Varbanov ‘Crystal Silence’ Viognier has a pale gold colour, with aromas of lemon, peach, acacia and vanilla. It’s dry but buttery with medium acidity and flavours of lemon, grapefruit, and almond on the palate. It has a slow finish which draws out the tropical fruit character. Complex, yet aromatic.
The pure, exotic fruit elegance of this wine can be enjoyed with fish, soft cheese and pasta dishes.
