Limoux is best known for its sparkling wines made from regional grape varieties. Bucking this tendency with phenomenal results, is winemaker Jean Claude Mas. He ferments hand-picked Chardonnay in oak barrels before letting them mature gently in French and American oak barrels for nine months. The result is wine the colour of pale gold showing aromas of lime, pineapple, quince, nuts and brioche. It is a medium-bodied white wine with a pleasant length on the palate. Enjoy with cheese or with creamy chicken dishes.
