La Moutonne is the jewel in Albert Bichot’s enviable crown of estates in Burgundy. They are the sole owners of this grand cru vineyard (between Vaudesir and Les Preuses). The wine is made from the best grapes on the estate, all hand-picked and carefully sorted. The makers of this wine evangelize, quite rightly, the quality of the fruit makes the wine reign supreme. As a result it is at the more focused end of the grand cru Chablis spectrum: fermented and stored in sealed tanks away from oxygen, with only 25% of the wine fermented in barrel with no new oak. The lees are stirred and the wines are aged for just under a year before final blending and bottling. It is one of the finest expressions of Chablis that there is. It is a white wine of exceptional longevity.
