Jérôme and Gaëlle both worked in the wine world before starting their own vineyard, Jérôme as vineyard manager of a domaine in the Côte de Beaune and
Gaëlle was in charge of a wine laboratory.
They have bought various parcels of land in and around Mercurey over the years and in 2007 bottled their first vintage under their own label. In 2011 after another winemaker retired they took over 4 hectares of vines in Puligny-Montrachet to complete their estate.
This wine originates from a single parcel in the commune of Mercurey.
The hand-harvested grapes are pressed and the juice is allowed to settle for a few days. It is then transferring it into French oak barrels, none of which are new.
Indigenous yeasts are employed for fermentation, and the wine matures for 10 months in barrel before blending and bottling.
