The secret to Fielden whisky is found in its fields.

If you look closely, you’ll see that no two fields of crops are the same. To really understand Fielden, it’s important to know what’s happening in the fields, and why—and how—it’s completely different.

Fielden is leading the way in regenerative farming, committed to bringing life back to England’s fields by growing heritage grains with great care.

This means no agrichemicals—no herbicides, pesticides, or fungicides—because nature is already doing the hard work.

It’s a more sustainable way of farming, better for the soil, the grain, and the wildlife. And it creates a whisky full of flavour.

The phrase “regenerative farming” is used by people to mean different things. Here is what it means to Fielden.

Fielden farmers follow their own farming approach: they plant a mix of heritage grains in clover, avoid the use of chemicals, and prioritise nurturing the soil.

This clover-based “restorative” grain growing system provides food in the fields for a greater diversity of plants, animals, and insects to grow and thrive, both above and below ground.

Fielden collaborates with farmers who aim to revitalise their fields, though not all of their farmers have adopted this method yet—such changes take time.

Once distilled, Fielden use a wide range of casks to enhance the flavours of their heritage grains. These include new American oak, refilled rye casks, and repurposed casks that once held wines like Sauternes and Moscatel.

If it helps to bring out more of the grain’s unique flavours, they’ll even move the whisky between different casks.

Producer’s Tasting Notes

Nose: Flowers and fruit, like the wild berries that grow in our hedgerows

Palate: Flaky pastry with caramel and hazelnut, and freshly baked bread.

Finish: The freshness of the grain and minty, peppercorn spice.
