Ivo Varbanov Syrah ‘Rhapsody in Blue’ is a 100% Syrah fermented in stainless steel, aged in 400-litre and 500-litre oak barrels. There is minimal fining and filtration to preserve the natural texture of the wine.
Bulgaria is a lesser-known wine country but one with a history dating back to 4000 BC. Its sunny, hilly climate lends itself particularly well to wines in a fruit-forward style.
This winery in the Thracian Valley, run by its founder Ivo Varbanov, focuses on organic and biodynamic farming. Ivo is both a concert pianist and a vigneron, dedicated to sharing Bulgarian culture with the world. He aims to produce wines with a high-quality focus on terroir, and remains involved in all aspects of winemaking.
Ivo Varbanov Syrah ‘Rhapsody in Blue’ has notes of powerful, warm, dark fruits with fruit cake spices and vanilla notes. Then, touches of humus, undergrowth and liquorice emerge. It’s smooth, velvety and elegant with fine, powdery tannins.
Each vintage he pairs his wines with pieces of music, according to their mood and style. For this vintage it is George Gershwin’s Rapsody in Blue.
This profoundly exuberant and classically modern Syrah is ideal served with juicy duck and vegetable-based dishes.
