Possibly unique: this is a dry unoaked white wine from Priorat made with Pedro Ximenez grapes. Priorat produces 95% red wine for a start. Of the 5% white wines many of them are produced from white Grenache, and almost all of them are oaked. Cellers Unio have access to a special plot of Pedro Ximenez that they use to make this wine, in small quantities, however the winemaker sees fit. In this vintage he decided that he would try to express the complexity inherent in this aromatic white grape variety. The wine is made like many fine aromatic whites (Sancerre, Pouilly Fumé, Albarinho, Riesling, etc…) with protective winemaking in temperature-controlled vessels and a period of ageing on fine lees in order to add texture to the wine. The result is a convincing peach-scented white wine with a satisfying crispness, refreshing acidity, medium to full body and a pleasing salinity on the finish.
