Llicorella Blanc Pedro Ximenez is possibly completely unique: this is a dry unoaked white wine from Priorat made with Pedro Ximenez grapes.
Priorat produces 95% red wine for a start. Of the 5% white wines many of them are produced from white Grenache, and almost all of them are oaked.
Cellers Unio have access to a special plot of Pedro Ximenez that they use to make this wine, in small quantities, however the winemaker sees fit. In this vintage he decided that he would try to express the complexity inherent in this aromatic white grape variety.
The wine is made like many fine aromatic whites (Sancerre, Pouilly Fumé, Albarinho, Riesling, etc…) with protective winemaking in temperature-controlled vessels. Then, it underwent a period of ageing on fine lees in order to add texture to the wine. The result is a convincing peach-scented white wine with a satisfying crispness and refreshing acidity. It displays a medium to full body and a pleasing salinity on the finish. It is also subtly spicy with notes of cinnamon appearing on the palate.
Enjoy Llicorella Blanc Pedro Ximenez alongside classic savoury tapas dishes like manzanilla olives and salted nuts. It also shines alongside soft cheese.
