This is a cream sherry whose youngest wines are at least 30 years old. It is a blend of Oloroso (75%) and Pedro Ximénez (25%) sherries that spend an average 15 years ageing apart at the winery, and then an average 15 years together in the same solera. It shows all the charm of a fine Oloroso wine (aromatic intensity, and flavours of candied orange, dried fig, burnt caramel and nuts) with some of the characteristic raisined sweetness of PX sherry. It is sweet – but about half as sweet as PX on its own. As such it offers a style of sweet sherry for those who by inclination or temperament do not find themselves suited to the intense treacly sweetness of PX sherry on its own.
