Gonzalez Byass Matusalem VORS Cream sherry features wines that are at least 30 years old.
It is a blend of 75% Oloroso sherry with 25% Pedro Ximénez sherry.
They age each type separately for around 15 years before blending them. Then, they age the resulting blend in the same solera for another 15 years.
The sherry displays the aromatic intensity and flavours of fine Oloroso, including candied orange, dried fig, burnt caramel, and nuts, along with a touch of the characteristic raisin sweetness from Pedro Ximénez. It is sweet, but about half as sweet as pure Pedro Ximénez. This makes it an ideal choice for those who prefer a less intense sweetness compared to the rich, treacly flavour of PX.
