The Meerlust Rubicon is made from grapes grown on the sunny slopes of the Stellenbosch hills.
Vines planted on these complex soils yield fruit that is kept healthy by prevailing south-easterly breezes.
This wine is made predominantly from Cabernet Sauvignon (with Merlot, Cabernet Franc and Petit Verdot making up the rest of the blend). Each grape variety was fermented separately and the wines were aged for 21 months in French oak from Allier and Nevers (60% new).
The Rubicon might be easily mistaken for a fine, concentrated, youthful wine from Bordeaux.
It shows red and black fruit as well as toast, cinnamon, clove, graphite, and cedar.
These wines are only released when they are ready to drink – but can benefit from up to 20 years of cellaring in the right conditions.
