Some PX sherries resemble puddings on their own! The Gonzalez Byass Noe VORS Pedro Ximenez though lusciously sweet, boasts significant complexity from its 30 years in the solera.
It starts from wines originally destined to become Nectar sherry, which undergo a much longer ageing process before bottling.
After being fractionally blended over three decades, the sherry is finally tapped off the end of the solera and sold.
This wine exhibits the classic raisin and dried plum notes of PX, along with additional aromas and flavours like bitter chocolate, mint, balsamic, incense, and ash.
