Passel Estate Shiraz is a rich, powerful red wine from Australia’s signature grape variety, displaying a lovely savoury quality.
Owners Wendy and Barry Stimpson hail from England and South Africa, respectively.
During their many visits to Margaret River, they fell in love with the region’s pristine natural beauty and world-class wines.
In 2005, they made Margaret River their home. Six years later, in 2011, they discovered the picturesque property with established vineyards and natural bushland that now forms Passel Estate.
The region’s maritime influence plays a crucial role in premium viticulture. Grapes receive ample sunlight during ripening, while cooling sea breezes help regulate temperature.
This Shiraz matured in a mix of French Oak barriques and puncheons, 30% of which were new, with bâttonage occurring every 5-6 weeks. After spending 10 months in oak, the wine was lightly fined before filtration and bottling.

Aromas of poached plums, black pepper and meat spice introduce a broad and voluptuous palate, dripping in black fruits and coating red tannin.
Flavours of rhubarb, all-spice and black berries are persistent through to the finish, savoury and steeped in graphite, all backed up by a lingering fresh acidity.
