Pernod is the world-famous, classic French aniseed-based aperitif. Created in 1920 from distillates of star anise, fennel and 14 other aromatic plants such as coriander and mint, it is one of France’s oldest liqueurs.

Originally, Pernod also contained grand wormwood and was produced at the Pernod Fils factory in Pontarlier as an absinthe liqueur. Almost a century after it was banned from sale, this spirit drink made with a smaller amount of absinthe, but still according to the traditional recipe, has made a comeback.

Once beloved in the bars of Paris, it is now a staple for cocktail mixologists everywhere.

The most traditional way to serve Pernod is over a sugar cube with the addition of ice water, which causes the liquid to turn milky. It also shines neat as an aperitif, or mixed with cranberry juice or bitter lemon for a deliciously simple cocktail.

Tasting Notes

Colour: Crystal-clear with greenish highlights; milky when diluted with water.

Nose: Powerful notes of aniseed, complemented by a bouquet of aromatic herbs. Some subtle balsamic tones.

Palate: Delicate anise with a lovely balance between sweetness and zest. Other aromatic notes such as mint and coriander also appear subtly.

Finish: Fresh and herbal.
