Ricard is the world’s bestselling pastis, an anise-based spirit that originated in Marseille. It is still made today using Paul Ricard’s original recipe from 1932.
It has a distinct fresh taste of liquorice and subtle Provence herbs, including star anise, fennel anise, and liquorice. Aged in large barrels in the open air in the South of France, the salt spray that licks the barrels imparts a slight ‘sea-side’ flavour to the liquid.
The tasting ritual associated with the original recipe recommends adding 10cl of chilled water to 2cl of Ricard and then adding ice. This causes the spirit to turn milky in colour, hence its colloquial name as the “Milk of Marseille”. Alternatively enjoy mixed with fruit juice or cordial. Bright and comforting, this is an easygoing palate opener perfect before a meal. It also shines alongside simple Mediterranean plates, at home or outdoors.
