Santorini produces what is arguably the finest Aegean white wine. It is made from Assyrtiko – a grape variety that is traditionally trained into a basket shape with the fruiting shoots on the inside to protect them from the strong winds that blow across the island. It is a crisp, aromatic wine that shows floral and fresh citrus characteristics. The palate is medium and the length is impressive but discreet. All in all this is a fine and elegant wine that will reward drinkers of Sancerre in possession of a sense of adventure.
