Waterford ‘Sheestown’ Edition 1.1 Irish Single Malt Whisky is a delightful Irish whisky focused on showcasing the terroir of Ireland through using locally grown barley.
Known locally as ‘the place of the lush grass’ Sheestown is a rolling, lowland terroir of well-drained loamy soil. There, Phillip O’Brien has farmed the land for half a century. Distillers produced and aged the whisky at Waterford.
For maturation, 35% of the casks were first-fill American oak, 21% virgin American oak, 25% premium French oak and 19% were previously used to age vin doux naturel (fortified wines).
Waterford’s origin-focused approach to whisky production has proved without a doubt that the farm is as important for whisky as the vineyard is for wine.
Enjoy Waterford ‘Sheestown’ Edition 1.1 Irish Single Malt Whisky neat. However, it also shines with a splash of water to really open up its complex flavour profile.
Tasting Notes
Appearance: An amber hue appearance with lingering oils.
Nose: Earthy notes on the nose with clove, poached pears and honeycomb.
Taste: Gentle spice mix greets the palate with lasting cloves that dries with citrus peel marmalade and fresh honey.
Finish: A long spicy finish that leaves a warm tingle on the front of the tongue.
