Peller are a family owned prestigious producer of icewine based in Niagra. Icewine is considered by many to be the pinnacle of the dessert wine world. It is a curious process that defies nature, being that the colder the region, the better the growing conditions. The grapes are harvested in the depth of winter, frozen on the vine to concentrate the sugars and acids in the grapes which are then picked in the early hours of the morning and taken to the winery for pressing. Yes, the grapes are pressed whilst still being frozen! This is a very long and expensive process but the end result is that any water is removed as ice leaving only the pure grape juice. Icewine is an immensely concentrated nectar, the flavours are of lemon and lime marmalade, papaya, mango and honey that starts off sweet and, due to the high acidity, almost finishes dry! It is a wonderful expression of Canadian Riesling icewine.
