This wine is crafted from grapes grown on Albert Bichot’s estate in Pommard, adjacent to the vineyards of Volnay.

The fruit is carefully handpicked and vinified in Bichot’s state-of-the-art, gravity-fed winery. The fermentation process begins in special temperature-controlled conical oak vats.

To extract fresh cherry, strawberry, and currant flavours from the Pinot Noir, the temperature is kept cool at the start of fermentation. Later, the temperature is raised to help extract color and tannin, adding body and structural balance to the wine.

After fermentation, the wine is aged in oak barrels for just over a year, with about one-third of the barrels being new oak.

Producer’s Tasting Notes

This Pommard “Clos des Ursulines” reveals a fruity nose redolent of cherry, blackcurrant and fig.

Over the years these aromas will evolve toward notes of coffee and leather.

Full and round on the palate with ripe tannins and rich, but not heavy, substance.

This wine is powerful and well-structured yet remains subtle, elegant and almost “feminine” due to the vineyard’s proximity to Volnay.

The finish is silky and velvety.
