This wine is labelled as Vin de France but the vineyards are based in our favourite famous sparkling wine region…
The grapes – 65% Pinot Noir and 35% Chardonnay – are hand-harvested and pressed in whole bunches. 30% is vinified in barrel and the rest in stainless steel tanks. The final wine spends 6-12 months on its lees, then is disgorged unfiltered with no added sugar or sulfites.
