Palo Cortado is the most loosely defined style of sherry.
Producers submit their wines to the sherry decision-making bureau for tasting, and if it smells and tastes like a Palo Cortado (literally meaning “broken stick”), then the wine can be labelled and sold as such.
This particular Palo is magnificent. It has spent at least 30 years in a solera and contains approximately 13% PX (equally as old).
The addition of this sweeter wine imparts a hint of fruit and adds extra depth and complexity. It is a symphony of dried fruit and nuts, burnt toffee, leather, and smoky characteristics.
