Producers cultivate the Espadín agave in Oaxaca’s highlands, where the plants thrive in mineral-rich soil. Each agave matures for up to ten years before expert hands harvest it at full ripeness. The piñas, or hearts, are roasted slowly in an earthen pit lined with volcanic stones. After roasting, a traditional stone tahona crushes the agave fibres, releasing their rich, sweet juice. The fermentation takes place naturally in open wooden vats, where wild yeasts transform the sugars into complex flavours. Distillers then double distil the spirit in small copper stills, ensuring clarity, balance, and character in every drop. Each batch undergoes careful tasting before bottling to preserve its precise flavour profile.
