Today it is Bertrand who runs the business having joined his father Joel in 1994.
His philosophy is very simple. He starts in the vineyard with great attention to detail to produce the very best grapes he can. He does this while maintaining great respect for the environment.
The specific Clisson granite soils crumble easily, allowing roots to go deep. The average vine age is 30 years. The grapes here produce powerful, rich wines with a beautiful minerality.
Increased texture and smoothness is obtain through 40 months of ageing on lees, and periodic lees stirring for the first year.
This wine has an intense and complex nose displaying a subtle combination of candied fruits, quince and very ripe citrus fruit. On the palate, this is powerful and warm, with flavours of stewed fruit, honey and candied notes, then a long finish.
Enjoy this as an aperitif, or perhaps with seafood like sautéed scallops.
