Every year Gonzales Byass releases special expressions of their sherries. This fino has spent six years ageing under a blanket of flor (the special film-forming yeast that keeps the wine protected from oxygen). It is a delicately nutty sherry with fresh almonds and walnuts showing alongside doughy aromas and flavours. This full-bodied wine has a long, lingering finish that pairs beautifully with nuts and olives, fish and seafood dishes.
