Highland Park 21 Year Old is crafted meticulously using just 48 casks of whisky.
Selecting similar quantities of contrasting cask types – 9 first-fill European sherry seasoned oak hogsheads, 8 bourbon hogsheads and 9 refill hogsheads – allows the rich flavours of the first-fill casks to come vibrantly to the fore. All this happens without losing the intense balance that is Highland Park’s hallmark.
As the warm spices and rich dried fruit flavours of the European casks mingle with the sweeter notes of vanilla, pear and exotic fruits from the bourbon hogsheads, the softer influence of the refill casks helps to create a beautifully rounded harmony.
Bottling Highland Park 21 Year Old at its marrying strength of 46% delivers a whisky that’s both rich and deep in character. This reveals delicious layers of spice and fruit on a wave of aromatic smoke, driven by Orkney’s unique heather peat.
It boasts a natural deep copper colour direct from the cask that’s both satisfyingly rich and intriguingly complex. The palate offers a medley of sun-ripened oranges, fresh ginger, vanilla cream, heather honey, aromatic peat smoke and toasted oak that linger in the finish.
