Produced roughly as traditionally as possible. It is a blend of Corvina, Corvinone, Rondinella, and Molinara. the grapes are dried for between three and four months and fermented in inert containers to preserve the intensity of the fruit flavours. The wine then spends 5 years maturing in 2500 litre Slavonian oak barrels, and are aged for one further year at the winery – in bottle – before release. The result is a wine that shows cherry, prune, plum, and blueberry fruit, along with toast, and cinnamon, and truffle and game characteristics. Suitable for ageing for up to 30 years from the harvest.
