Palo Cortado is a style of sherry governed by some rather haphazard rules, in that there are no rules that dictate its standards of production. Samples are submitted to the regulatory body and if it smells like “palo” and tastes like “palo” then it is labelled as such. This particular wine is made with 100% Palomino and aged oxidatively producing a style of wine which is a good half-way between a fresh, young Amontillado and a matured Oloroso. It has all the complexity of an Oloroso such as walnuts, fudge and dried apricot fruit but with a fresh complexion of bitter orange, hazelnuts and sultanas of an Amontillado. This is a top quality expression of Palo Cortado.
