Sensale Grillo Bio is a delicate and elegant Italian white from the native Italian Grillo grape. It displays a delightful white peach and yellow melon aroma.
It is crafted by the Cantine Europa cooperative under the Sibiliana label. One of largest wineries in Sicily, Sibiliana Vini uses the latest in modern winemaking technology to produce this range of wines from indigenous Sicilian grapes. These wines are a true reflection of the warm, sunny climate of western Sicily, where the grapes flourish in mineral-rich, well-drained soils. They embody both the tradition of Sicilian winemaking and the commitment to sustainable, organic agriculture.
The grapes for this wine, after hand-harvesting, are rapidly taken to the winery, gently pressed under one BAR of pressure at most and immediately refrigerated at 16°C. The high quality wort is prepared for the fermentation with the selected yeast at a temperature of 16°-18° days. It then ages in a stainless tank a controlled temperature.
Sensale Grillo Bio is a straw-yellow wine with a fresh and friendly character. On the palate it displays great balance: savoury and fruity at the same time. It has bright and juicy green apple, white peach and honeydew melon aromas. Persistent floral mingle with ginger spice and lovely fresh acidity, both on the nose and the palace. The aromas carry through each sip with elegance and persistence. The finish then surprises with a tang of grapefruit.
