Starward Solera Australian Single Malt Whisky is a rich, sweet and spicy Australian whisky made at the New World Whisky Distillery in Melbourne.
Solera was the very first whisky from this distillery and is a bona fide Starward take on a traditional whisky expression. It uses 100% Australian barley and is matured exclusively in re-coopered and re-sized Apera barrels. For a bold, craft flavour the producers ferment their barley with brewers’ yeast. There are no additives or coloring used.
Solera is a method the Spanish used to age their Sherry and keep it consistent, and it finds a new use here in whisky distilling. Producers blend a fractional amount of each young cask with more mature spirit. This therefore means there’s a tiny amount of the first Solera in every bottle made today.
Remarkably fruity and beautifully composed as a result of the Solera process, this is a seriously impressive whisky.
Enjoy Starward Solera Australian Single Malt Whisky neat or with a splash of water to fully unlock its complex flavour profile.
Nose: Bright tropical and orchard fruits, caramel and vanilla. A little marzipan then lingers underneath.
Palate: Toasty caramel and creme brûlée, banana, figs and sweet spice. Some subtly jammy fruit.
Finish: Juicy and full, then with a lingering dry spice. Hints of milk chocolate.
