Florio Marsala Superiore Dolce 2017 ages for 30 months in oak barrels, using Catarratto, Grillo, and Inzolia grapes.
The harvest of Grillo grapes is strictly by hand, starting from mid-September. Winemakers choose the ripest bunches on each vine to build a wine with a high and mature sugar content.
Energetic extraction forces come into play through the use of the traditional wine press. The result is a wine loaded with colour, dry extracts and extreme marine flavour. Fermentation in cement, punctuated by continuous micro-oxygenation, continues into post-fermentation, preparing the wine for the encounter with alcohol.
A balanced and pleasurable Marsala, this is the winemaking synthesis of a journey in oak-wood of many shapes and sizes in the grandeur of the Florio Cellars. It offers an experience in contemporary sensorial style, with warm aromas of dates, dried nuts and apple. These ripen on the palate to display notes of rich ripe grapes, with a hint of liquorice and red florals. Superiore Dolce 2017 Marsala is generously warming, sweet, and sticky on the palate, balanced by a surprising freshness.
Florio Marsala Superiore Dolce 2017 pairs excellently with a variety of dishes. It complements rich desserts like almond cake, cannoli, and dark chocolate, as well as blue cheeses, aged cheeses, and pâté. Its versatility makes it an ideal choice for both sweet and savoury pairings.
