Idun Cabriole Sauvignon Blanc is a vinous exploration of the Bot-River area in the Cape South Coast, South Africa. It expresses Idun’s winemaking philosophy: one of minimal intervention to produce a unique terroir driven wine.
This wine hails from Elgin, one of South Africa’s coolest-climate wine regions. This allows for the perfect ripening of grapes, creating wines that have freshness, flavour and balance.
The Sauvignon Blanc grapes in this wine grew on southerly slopes exposed to cool sea breezes. This allowed slow and extended grape ripening. The sandstone soils induced low to moderate vigour which resulted in low yields but concentrated flavour.
Winemakers hand harvested the grapes, then chilled and gently whole bunched pressed them. The juice was settled for 10 hours, then racked and fermented partially using stainless steel tanks and 4 and 5 year old French oak barrels. The wine was blended together after 8 months, lightly filtered and bottled.

Producer’s Tasting Notes
Signature lime, granadilla and gooseberry aromas are prominent. The palate is vibrant yet textured, layered with yellow fruits, leading towards a saline character. The finish is long, somehow still refreshing.
