Astélia Sauvignon Blanc is a delightfully full and floral white wine from the visionary team behind the Paul Mas brand.
Every aspect of Clos Astélia bears the draughtsmanship of Jean-Claude Mas, of Domaines Paul Mas. From the house, to the cellars and the bottles. He has tried to bring together all his many passions into one estate.
Astélia Sauvignon Blanc comes from the best vineyards across Jean-Claude’s seven estates. Two vineyards in particular, the ‘La Plaine’ plot, at Château de Conas, on loam soils and ‘Altros Dos’ from the chalky soils of Château Arrogant Frog, are both farmed organically according to bio-dynamic principles.
With some plots enjoying cool night temperatures, Astélia achieves a perfect balance between acidity and alcohol. The 36-hectare vineyard produces 15% rosé, 20% white, and the rest red wines.
This Sauvignon displays aromas of white flowers and citrus fruits, followed by notes of honey. It is full in the mouth, soft and crisp, with fresh lemony notes on the finish.
Astélia Sauvignon Blanc is an excellent aperitif. However, it also shines as an accompaniment to a salad with shrimps and citrus fruits, zucchini and ricotta or carpaccio of scallops with a dressing of lemon and pink pepper.
